Engine not hot enough??
Here there I was riding home and as usual I took the long way home when I noticed my engine temp was running at 105 degrees and was staying there. Normally it's around 180 to 205 but today it stayed at 105 the longest before it finally reached 113 and never went up. Usually I get worried if the temp goes to high, but it seemed to low. I finally stop for a drink and got right back, this time the temp went to it's usual 180+. Should I be concerned about this? Does lower than usual temp indicate anything sinister?

I'm not sure, I have an 06, I just have the bar gauge for engine temp. but seeing the problems I've been suffering with I'd be calling the dealer and having it checked out, you could have a stuck open thermostat or a faulty temp sending unit. that would make the bike run excessively rich shortening your spark plug life and causing poor fuel mileage. or it may be nothing. I'm just a little paranoid right now, so I think everything is potentially catastrophic engine failure.

On the '07, if you hit the left button ("reset" I think) the engine temp swaps over to the air inlet temp. I've noticed that the air inlet temp is about 20F hotter than the air. I bet you pressed the reset button by accident. When you turn on the bike again, the temp defaults to engine temp, and then you saw your 180F.
